ICAR-CIPHET grants license for Fat free flavoured makhana technology to budding entrepreneur from Varanasi

Makhana is an organic, nutritional, non-cereal edible crop. Makhana is a good source of carbohydrate, protein, and minerals. In recent years, the price of makhana has increased due to rising demand from both domestic and foreign markets. Flavoured makhana products are manufactured with the use of edible oil or fat along with other flavouring materials and spices. Thus, a fat-free product is converted into a product that may contain oil up to 30%. Therefore, the calorific value of makhana is increased due to the addition of fat or oil, which is not desirable for the health of consumers.

Ludhiana, November 28, 2025: Makhana is an organic, nutritional, non-cereal edible crop. Makhana is a good source of carbohydrate, protein, and minerals. In recent years, the price of makhana has increased due to rising demand from both domestic and foreign markets. Flavoured makhana products are manufactured with the use of edible oil or fat along with other flavouring materials and spices. Thus, a fat-free product is converted into a product that may contain oil up to 30%. Therefore, the calorific value of makhana is increased due to the addition of fat or oil, which is not desirable for the health of consumers.

Keeping the above facts in view, ICAR-CIPHET Ludhiana has developed the technology “Process for Preparation of Fat Free Flavoured Makhana.” Yash Roda, a budding entrepreneur from Varanasi, approached CIPHET to obtain a license for this technology. The research team consisted of Dr. Mridula Devi, Dr. R.K. Vishwakarma, Dr. Ranjeet Singh, Dr. R.K. Singh, and Dr. S.N. Jha.

On successful completion of the training, the certificate of licensing and training was awarded by Dr. R.K. Vishwakarma, I/c Director, CIPHET Ludhiana, to the entrepreneur on Friday.
