Ludhiana, July 15, 2015: Made In India, the specialty Indian restaurant at Radisson Blu Hotel MBD Ludhiana started an Awadhi Food Festival. The food festival that kick starts from today will be on till 25th July, 2015. Chef Jyot Singh Rana, Master Chef at the restaurant having a vast experience in the Indian Culinary techniques has brought together recipes of the Awadh region to the doorstops of Ludhiana.
Awadhi cuisine is from the city of Lucknow, which is the capital of the state of Uttar Pradesh in Central-South Asia and Northern India. The cooking patterns of Lucknow are similar to those of Central Asia, the Middle East, and Northern India with the cuisine comprising both vegetarian and non-vegetarian dishes. The Awadh region has been greatly influenced by Mughal cooking techniques, and the cuisine of Lucknow bears similarities to those of Central Asia, Kashmir, Punjab and Hyderabad. The city is also known for its Nawabi foods.
The bawarchis (chefs) and rakabdars (gourmet cooks) of Awadh invented the dum style of cooking or the art of cooking over a slow fire, which has become synonymous with Lucknow today. Their spreads consisted of elaborate dishes such as kebabs, kormas, biryanis, kaliyas, nahari-kulchas,roomali rotis. The richness of Awadh cuisine lies not only in the variety of cuisine but also in the ingredients used like mutton, paneer, and rich spices, which include cardamom and saffron.
Speaking on the occasion Mr. Arindam Chakraborty General Manager, Radisson Blu Hotel MBD Ludhiana said, “We at Radisson always try and bring to the true foodies of Ludhiana a unique experience in fine dining.”
Being offered during the food festival the following are available, Dal Ulfat Shorba, Yakhni Shorba, Jhinga Mehrunnisa, Mahi-e- Gulfam, Sahi Kakori Kebab, Nakhas ki Boti, Murgh Malihabadi Tikka, Keba e Bannu, Mallika-e- Dariya, Hussainabadi Gosht, Murg Wajid Ali Shah, the vegetarians need not worry as fare on offer for them includes Gulfisha Kebab, Gucchi aur Safed Khumb ke Galavat, Hariyali Kebab, Nawabi Tikka , Subz Shabenoor, Awadhi Paneer, Paneer Hazrat Mahal, Shabnam Curry  amongst a lot of other delicacies.
